Melktert is Afrikaans for “milk tart” and is a Dutch inspired South African dessert.
The crispy pastry crust holds a cold (cooked) milk based “custard like” filling with cinnamon or nutmeg sprinkling on top. It is somewhat similar to Portuguese custard pies and Chinese egg pies.
This is a great easy dessert to make for guests or to take to friends.
Ingredients:
- Crust: Purchase a Graham Cracker Pie Base at the supermarket (this is way easier than making a base from scratch and makes this a really easy quick recipe!)
- Tart Filling:
– 2 ¼ cups milk
– 2 tablespoons Cornstarch
– 2 tablespoons flour
– 2 large eggs
– 1 tablespoon butter
– 1 tablespoon vanilla essence
– ½ cup sugar
– pinch salt
– cinnamon for sprinkling on top
Instruction:
- Note: the mixture burns easily when on the stove – you need to watch it carefully.
- Boil milk
- In a separate pot beat together the eggs, sugar, flour, cornstarch, and salt
- Add the boiling milk to the egg mixture, about a cup at a time and mix well
- Return to the stove and stir constantly while the mixture thickens
- Beat it if lumpy
- When the mixture is quite thick and smooth – add the vanilla and butter and mix well
- Pour into the crust, sprinkle with cinnamon and set in the fridge
